Some dishes tell the story of Milan in a single bite, and the Milanese cutlet (cotoletta alla milanese) is one of them. Golden, buttery, with the bone standing proudly in the middle. Yet between thin “elephant-ear” versions and industrial breadcrumbs, finding one made the right way has become surprisingly hard. Here’s what the authentic cutlet is, how to recognise it, and where to enjoy it in the heart of Milan, a short walk from the Navigli.
What the Milanese cutlet really is
The Milanese cutlet starts from one precise cut: a bone-in veal loin, at least a couple of centimetres thick. It’s dipped in egg and a not-too-fine breadcrumb, then cooked in clarified butter until it forms a golden, crisp crust that protects a pink, juicy interior.
That’s where it all happens: the traditional cutlet is tall, not thin. The flat, wide “elephant ear” is a more modern, showy variant — tasty, but different from the original.

Our cutlet, at Trattoria da Panciroli
For us the cutlet is a small ritual, and it begins with the raw material. We choose veal from the Netherlands, french rack cut — the frenched, carefully cleaned rib — to always get the right height and tender, juicy meat. It is cooked strictly in clarified butter, as Milanese tradition demands: no shortcuts, just the authentic taste of Milan.

How to spot a well-made cutlet
You don’t need to be an expert — just a few signs.
- The bone is there. The classic cutlet keeps it: proof of the right cut, and it adds flavour to the meat.
- The colour is gold, not brown. A burnt coating tastes of tired frying; the right one is golden and dry.
- It smells of butter, not oil. Butter is the soul of the dish: it brings roundness and that unmistakable aroma.
- The meat stays pink. Tall and properly cooked, inside it must remain tender and juicy, never dry.
The side and pairings
We make the side ourselves too: hand-cut potato chips, then fried — crisp and light. The perfect companion, one that doesn’t cover the cutlet’s flavour but lifts it.
For the rest, the classics always work: a soft red or a dry sparkling wine, which cut through and refresh the palate between bites.
